Grains and starches allowed in a gluten-free diet include:

  • Amaranth
  • Arrowroot
  • Buckwheat
  • Corn
  • Cornmeal
  • Gluten-free flours (rice, soy, corn, potato, bean)
  • Grits
  • Polenta
  • Pure corn tortillas
  • Quinoa
  • Rice
  • Tapioca

There are a lot of basic foods that are naturally gluten-free:

  • Beans
  • Cheeses
  • Eggs
  • Fresh meats, fish and poultry (not breaded, batter-coated or marinated)
  • Fruits
  • Nuts
  • Potatoes
  • Rice
  • Vegetables
  • Wine and distilled liquors, ciders and spirits

With a little creativity, and some research…you can easily create meals and snacks that are satisfying and taste good.
